2010 Sauvignon Blanc  (Sold Out)

Philosophy

This wine has been a labor of love of sorts for me, after four years of working with Sauvignon Blanc we finally threw everything we knew of making this varietal out the window and started over. Normally Sauvingnon Blanc receives very minimal skin contact, typically occuring in the press for 30 minutes to one hour. We decided that in order to make something special we would need to take some risks. So, instead of the typical 30 minute skin contact, we allowed 48 hours to extract a much larger amount of phenolics (for color and tannins) and esters (for more aromatics). We followed this up by barrel fermenting in 100% new French oak then aging the Sauvingnon Blanc for seven months in new French oak, and bottled without fining or filtration.

The result:

A wine that has the intensity and complexity of a great red wine and the stunning aromatics of an enoumous white. As some of you lucky few who have had the chance to try it would agree, there is no other wine like the 2010 Tenor Sauvignon Blanc. It has been called "varietaly-untrue" by one reviewer who quickly followed with "a simply delicious wine", but regardless of others opinions this is one wine you need to try for yourself.

 

 

Tasting Notes

Harvest golden in color, and a nose that overflows with starfruit, pineapples, guava, exotic spices and lacings of grapefruit and gooseberry. When swirled, massive amounts of pineapple, peaches and nectarine rise from the glass. The palate is dense and concentrated with a rich mixture of ripe yellow fruits and spicy oak. A multitude of textures intermingle with crisp minerality, incredible presence and bright acidity. And a silky finish lingers, adding a final touch of elegance to the incredible, almost indescribable attributes of this wine.

Drinkability

A unique wine that will age very similar to Chardonnay. This wine shouldn't require more than being opened at 55-58 degrees and allowed 15-20 minutes to open before serving. It should show well for 4-6 years, maybe longer. Glassware should be a standard Red Wine glass. Or a Riedel Vinum Syrah/Shiraz if you are lucky enough to have them.
